Homemade Mayonnaise

Who would have known mayonnaise is so easy to make? I created this recipe one night when I needed mayo for a sauce base, only to find I was completely out. It comes together in less than a minute with an immersion blender! Chances are, you already have the ingredients required, and there is nothing better than making something from scratch and being confident you know what you and your family are consuming.

Ingredients

  • 1 large egg
  • 1 cup light olive oil or avocado oil
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice or apple cider vinegar
  • ¼ tsp salt
  • Pinch of sugar

Instructions

  1. Add all ingredients to a wide-mouth jar.
  2. Place an immersion blender at the bottom and blend without moving for 10–15 seconds.
  3. Once thickened, slowly lift the blender to incorporate the remaining oil.
  4. Store in the refrigerator for up to 1 week.
