
Tater Tot Casserole is a staple Midwest dinner and it is so easy to throw together! I love it because of how customizable it is as well. It is perfect to sneak some hidden veggies in for those picky eaters. Add hot sauce to the top for a kicked up version.
Ingredients
- 1 lb ground beef
- 1/2 an onion, diced
- 1 Tbsp minced garlic
- 1 can “cream of” soup – you can really use whatever one you prefer, but I like mushroom when I have it on hand OR click here for my “cream of” dry mix recipe
- 1/4 cup whole milk
- 1 cup frozen corn
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- salt and pepper to taste
- 2-3 cups tater tots
- 1 cup shredded mild cheddar cheese
- chives or fresh parsley for garnish
Directions
- Brown beef in a pan. Once almost cooked through, add in the onion and garlic.
- In a bowl (or the same pan if large enough) add in your “cream of” soup, milk, frozen corn, and seasonings.
- Transfer mix to a greased 9×13 pan and spread evenly.
- Place a single layer of tater tots on top.
- Top with shredded cheese.
- Bake at 350 degrees F for 30-40 minutes or until bubbly
- Garnish with chopped chives or parsley
Variations and Customizations
Add in additional vegetables:
- green beans
- mushrooms
- spinach
- broccoli
- finely shredded carrots
- shredded zucchini
- peas
Change up the protein for different diets or healthier options:
- Swap in ground turkey or chicken
- Make a breakfast version with diced ham or breakfast sausage
- Sub black beans in instead of meat for a vegetarian friendly recipe
Completely customize the casserole using the following ingredient combinations:
- Buffalo: shredded chicken, buffalo sauce and bleu cheese drizzle
- Loaded Baked Potato: add in bacon and top with sour cream, cheddar, and green onions
- Cheeseburger Style: add in pickles and drizzle with burger sauce after cooking
Freezer Tips
- Use an aluminum foil pan and wrap tightly with plastic wrap or foil lid
- Bake from frozen at 375 degrees F for approximately 60 minutes
