Creative Uses for Strawberry Tops: DIY Vinegar

My toddler LOVES strawberries. I swear some days she is running only berries. While composting the uneaten strawberry tops is a great option, I was looking for something else to do with them. That is when I discovered homemade Strawberry Top Vinegar. It’s is so easy, and you probably already have everything you need to make it!

You will need:

  • A clean glass jar with a lid
  • White vinegar
  • Strawberry tops or scraps
  • Fine mesh strainer or cheesecloth

To make:

  • Pour 5 cups of distilled white vinegar into your clean glass jar.
  • Add in approximately 4 cups of strawberry tops or scraps.
  • Close your jar and label it with the date.
  • Place the jar in the fridge for at least 1 week, occasionally shaking lightly.
  • Once the time has passed, strain the liquid through the fine mesh strainer or cheesecloth into a clean container.
  • Enjoy your strawberry vinegar!

Optional Waterbath Canning Steps:

This recipe is for 4oz or 8oz canning jars.
  • Prepare canner, jars, and lids.
  • Strain vinegar thoroughly into a saucepan without squeezing.
  • Heat vinegar on medium heat until it reaches 180 degrees F.
  • Ladle hot vinegar into hot jars, leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
  • Place jars in waterbath canner ensuring water covers the jars. Bring to a rolling boil and process for 10 mins.
  • Remove canner lid and wait 5 mins.
  • Remove jars from canner and place on a clean towel in a draft-free area to sit for 12-24 hours.
  • Check seals, label, and store.
